2 lbs of large beets, peeled (in my case on BIG beet)
2 Tbsp olive oil
Preheat air fryer to 320 (or if you do not have an air fryer 350
Using a mandoline thinly slice beet to a thickness of 1/16".
In a large bowl, toss beet slices with oil to coat evenly.
If using air fryer arrange beets in a single layer so not crowding.
Bake until crisp, 20-25 minutes. However halfway thru rotate the pan (I found this was VERY important to keep the chips in the back of the oven from burning).
Cool chips and blot with a paper tow to remove any excess oil.
Toss chips with 1/4 teaspoon salt and pepper to taste.
