Lemon is one of my favorite flavors in so many of the things I make. I have a lemon chicken I love to make, lemon zest is good in salads and also with the holidays on the way I love to make lemon breads and other special lemon treats with berries. Only problem is having lemon zest on hand when I want it. So here is a way to have that favorite zest on hand at all times!
*Choose organic oranges, Thoroughly wash and dry the fruit.
*Carefully use a citrus grater to lightly grate off only the top layer of the skin. Avoid grating the white pith because it makes baked goods taste bitter. Here is one of my favorite graters (https://amzn.to/2Q3Tqe3)
*Transfer the grated peel to a flat dish. Leave it overnight or longer, if needed.
*When the grated peel is completely dry and coarse, store it in a clean glass jar. (I have labeled spice jars I keep it in) *Keep it out of the sunlight to prevent fading.
*When it's time to bake, crush the peel between your fingers before adding it to other ingredients. This will release the citrus essence and flavor. Use in the amounts called for in the recipe.
-This is also great with orange zest as well. We love to make a cranberry orange scone this time of year at the b&b so it is great to have this on hand.
-Also I love fresh lemon juice in my water in the mornings before squeezing the lemon it is good to zest the peel and again let this dry and add to your jar of zest!
