Blue Corn Pancakes

1 cup blue cornmeal
2 eggs
1-cup flour (or to make gluten free I use Oat Flour)
½ cup vegetable oil
2 teaspoons baking powder
1 ½ cups milk or almond milk (I prefer the almond milk)
½ teaspoon salt

Mix together flour and eggs
Stir in blue cornmeal, baking powder, and salt in a mixing bowl.
Stir in milk and slowly beat in oil. Drop approx. ¼ cup onto a hot griddle.
