Apple Crepes with Cranberry Glaze Sauce


1 cup milk

3 eggs

2/3 cup flour

1/4 teaspoon salt

2 tablespoons sugar

1/8 teaspoon vanilla extract

3 ½ tablespoons butter

Combine milk, eggs, flour, salt, sugar, and vanilla in a mixing bowl, and blend with electric mixer at medium speed.

Melt butter in a crepe pan over medium high heat until pan is hot. Pour melted butter into batter, leaving a film of butter in skillet, and blend until well combined.

Fill a 1/4-cup measuring cup with batter. Remove pan from heat and steadily pour in batter, swirling to create a thin, even layer. Return skillet to heat, and cook until crepe is golden around the edges and dry in the center (about 45 seconds).

Flip crepe carefully, and cook until golden (about 10 seconds). Repeat with remaining batter, adding more butter to coat pan if crepes begin to stick.
