Gluten Free Red Velvet Pancakes w/ Chocolate Maple Syrup

Ingredients:

1 cup oat flour
1/4 cup tapioca flour
1/4 cup Brown Rice flour
1/4 tsp. xantham gum
1 tsp. baking powder
1/4 tsp salt
6 tablespoons cocoa powder
1/4 cup coconut palm sugar
1 tablespoon sucanat
1 1/2 tsp. red powder food coloring
1 tsp. butter or coconut oil
1 egg
1 1/2 tsp. vanilla
1/4 cup plain greek yogurt
1 1/2 cups milk or almond milk

Directions:

Mix dry ingredients together (oat flour, tapioca flour, brown rice flour, xantam gum, baking powder, salt, cocoa powder, palm sugar, sucanat)
Add egg, vanilla, milk, yogurt and mix well
Melt butter and mix into batter
Place approx. 1/8 of a cup of batter on greased griddle.

Syrup Ingredients:

1/2 cup chocolate chips
1 tsp coconut oil
2 tablespoons maple syrup

Directions:

Melt chocolate chips and coconut oil together in a microwave safe dish. Add maple syrup to mixture and mix well
