Green Chile Quiche
1 - 2 cans (4oz each) whole green chile
1 pound Monterey Jack cheese grated
¼ cup chopped onions
¼ cup browned sausage or 3-4 slices of Canadian bacon chopped
1 tomato chopped
Cut chiles in half lengthwise, remove seeds, rinse with water and pat dry. Spray 9 or 10-inch pie pan with cooking spray. Line the prepared pan with green chile; cover the bottom and half way up the sides. Sprinkle onions, tomato, and sausage over the top of the green chile.
Mix eggs in bowl with seasoning. Pour over the top of the green chile. Spread grated cheese making sure that the chilies are completely covered.
Bake at 400 for 15-20 minutes or until a knife inserted in the center comes out clean. Cool slightly and cut into 6 pie wedges. Serve warm.
*This is one of my favorite dishes because of the tasty green chile. For a vegetarian option just leave the meat out. This is also a recipe that was shared with me from my mom. She made this often in a 9x13 dish, sliced in squares and took to church potlucks.
