Quick and easy omelet (Family style)

Ingredients:

1⁄2 cup flour (if gluten free use oat flour)
1-cup milk (can also use almond milk)
2 tablespoons butter melted
1⁄2 teaspoon salt
4 eggs
Salt & Pepper for seasoning
Medium tomato - chopped
4 oz chopped green chilies
1⁄2 small onion chopped
1-1⁄2 cups grated Monterey jack/cheddar cheese
1 cup chopped fresh spinach

Directions:

Preheat oven to 350. Line a 15x10 inch rimmed baking sheet with foil. Generously grease foil. Beat flour, milk, butter, seasonings and eggs until well blended; pour mixture into baking sheet. Sprinkle top of egg mixture with onion and green chili.
Bake for 15-18 minutes, until eggs are set. Immediately sprinkle with cheese , tomato and spinach.
Roll up omelet, beginning at narrow end, using foil to lift and roll it.
Cut omelet into 1 1⁄2 - inch slices and serve on plates garnished with fresh spinach leaves.
(If you want meat you can put chopped Canadian bacon or cooked sausage on top of the egg mixture with the onion and pepper before putting in the oven)
