Cheesy Eggs


Canadian bacon or Tomato Slice (1/4” thick)

Eggs (one per serving)

Chopped Green Chile


Organic No-Salt Seasoning or seasoning of choice

Ramekins (one per serving)


Spray ramekins with non-stick spray

Place a slice of Canadian bacon or tomato slice (for vegetarian option) in bottom of ramekin.

Place handful of shredded cheese in ramekin. Shape with fingers into the shape of a bird nest

Crack egg in middle of cheese nest. Sprinkle top of egg lightly with seasoning.

Cover ramekin with foil, place in oven and bake at 400 for approx. 15 minutes. Lift foil to check doneness of egg; try to not overcook egg

To serve, run knife around edge of ramekin. Using a knife, gradually slide the egg out while tipping ramekin at the same time

**For a vegetarian option use a tomato slice rather than a slice of Canadian bacon

*I love this dish since it can be made for one or many. A perfect dish when I have a smaller amount of guests.
